Cold-Fighting Vegan Rice Dish

Cold season is officially upon us so I created a spicy rice dish that will not only clear your sinuses, but it will also comfort and warm you. This is a heartier alternative to soup and leaves you feeling full and satisfied.


Prep time: 1 hour 20 minutes



Ingredients:

1 32 oz. Carton veggie broth
2 cans organic diced tomatoes
1 leek
2 white potatoes
2 cups basmati rice
1 tbsp ground red pepper
1 tbsp garlic powder
1/4 cup nutritional yeast
salt and pepper to taste



Recipe:

Super easy! Chop potatoes to half 1/2 inch cubes and thinly slice leeks. In a large pot combine all ingredients and simmer on low heat for 1 hour and 15 minutes. Top with freshly squeezed lime and avocado. *Add water if it gets too dry. Enjoy!
