Vegan Avocado Pesto Zucchini Noodles
Hey Healthy Eaters! Today I'm sharing a quick, inexpensive and easy recipe that is dense with nutrients. If you are trying to stay plant based with less simple carbs, this is a great way to curb the craving for pasta. You can literally make this healthy meal in 15 minutes or less and it's tastefully filling.
Prep Time: about 15 minutes
Ingredients:
Noodles: Using an OXO Hand Held Spiralizer ($15 from Target, my favorite because it's easy to use and portable) spiralize one zucchini into a regular bowl.
Top with sauteed mushrooms or any other vegetable of your choice. You can also sprinkle nutritional yeast over the top for added vitamin B's. Can be served cold or warm. Enjoy!

- 1 tablespoon olive oil

- 1 handful kale (optional)
