Almond Butter Coffee Protein Cookies
This post is for all you coffee lovers out there! Although I am not a coffee drinker anymore, I do still enjoy the rich earthy flavor that it holds and I always loved to pair it with something sweet. I was determined to combine the two into one treat and also add a punch of protein. These cookies are 100% vegan and gluten free, but not lacking in robust flavor and enjoyable texture.

Begin by preheating the oven to 350 degrees. Mix together almond butter, coconut oil, vanilla, flax egg, and agave in a large bowl until well combined. Add in coffee grounds to the wet mixture. In a smaller separate bowl, combine the flour, protein powder, baking soda, baking powder, and salt. Slowly mix the dry ingredients in with the wet ingredients until the dough is well formed. Roll the dough into 1 inch balls then flatten them down. Bake the cookies for 15 minutes and let them completely cool before eating. Enjoy!

- 1 flax egg ( 1 Tbsp of flax mixed with 3 Tbsp water)
- 2 cups Bob's Red Mill gluten free flour
- 1 cup almond butter
- 1/2 cup agave
- 1 tsp vanilla
- 2/3 cup melted coconut oil
- 1/2 cup coffee grounds
- 1 scoop vanilla Vega Protein and Greens powder
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 pinch of salt
